No-Bake Pumpkin Pie Balls (Print Version)

# Ingredients:

01 - 1/2 cup pumpkin puree
02 - 1 1/2 cups old-fashioned oats
03 - 1/2 cup almond butter
04 - 1/4 cup honey or maple syrup
05 - 1 teaspoon vanilla extract
06 - 1 1/2 teaspoons pumpkin pie spice
07 - 1/2 teaspoon cinnamon
08 - 1/4 teaspoon salt
09 - 1/4 cup ground flaxseeds
10 - 2 tablespoons mini chocolate chips
11 - 2 tablespoons chopped nuts

# Instructions:

01 - Combine pumpkin puree, almond butter, honey (or maple syrup), and vanilla extract in a large bowl. Stir until smooth.
02 - Mix in oats, pumpkin pie spice, cinnamon, salt, flaxseeds, and any optional mix-ins like chocolate chips or nuts.
03 - Cover the bowl and refrigerate the mixture for at least 30 minutes to help it firm up.
04 - Use a small cookie scoop or your hands to roll the mixture into 1-inch balls.
05 - Store the energy balls in an airtight container in the refrigerator for up to a week, or freeze for up to 3 months.

# Notes:

01 - For extra protein, add 1-2 tablespoons of protein powder.
02 - If the mixture is too sticky, add a bit more oats; if too dry, add a little extra nut butter.
03 - Try rolling the energy balls in shredded coconut or crushed nuts for extra texture.
