Homemade Chinese Doughnuts Dessert (Print Version)

# Ingredients:

01 - 2 cups (255 grams) all-purpose flour
02 - 2 teaspoons granulated sugar
03 - 1/2 teaspoon fine salt
04 - 2 1/2 teaspoons baking powder
05 - 6 tablespoons (85 grams) cold unsalted butter, cubed
06 - 3/4 cup (170 grams) whole milk
07 - Canola oil for frying
08 - Granulated sugar for coating

# Instructions:

01 - Pour 2 inches of canola oil into a heavy-bottomed pot with a deep-fry thermometer attached. Heat to 350°F.
02 - In the bowl of a food processor, combine the flour, sugar, salt, and baking powder. Add the butter and pulse several times until the mixture resembles coarse meal. Alternatively, use a pastry blender by hand.
03 - Stir in the milk until the dough is well combined.
04 - Turn the dough out onto a floured surface and dust with additional flour. Gently pat the dough out until it is 1/2-inch thick. Use a 2-inch round biscuit cutter to cut out circles.
05 - Fry the doughnuts a few at a time to avoid overcrowding. Fry until golden brown and cooked through, approximately 2 minutes per side. Be cautious not to burn them.
06 - Let the fried doughnuts drain on a paper bag or paper towels to remove excess grease. While still hot, generously coat each doughnut in granulated sugar.
07 - Serve the doughnuts warm. They are best enjoyed on the day they are made.
