In a bowl, mix chopped strawberries, Greek yogurt, honey, and vanilla extract. Drop spoonfuls of the mixture onto a parchment-lined baking sheet. Freeze for 1 hour, or until firm.

In a microwave-safe bowl, melt chocolate chips and coconut oil in 30-second intervals, stirring until smooth.

Dip each frozen yogurt cluster into the melted chocolate, coating completely. Place them back on the parchment paper and sprinkle with crushed nuts, coconut, or sprinkles (if using).

Freeze for another 15–20 minutes, until chocolate is set. Enjoy immediately or store in the freezer for up to 2 weeks!
