Cheesy Bean Skillet (Print Version)

# Ingredients:

01 - 1 yellow onion, medium-sized.
02 - 2 garlic cloves.
03 - 2 cans (15 oz each) of butter or cannellini beans, rinsed.
04 - 2 spoonfuls of olive oil.
05 - Half a teaspoon of oregano, dried.
06 - 5 oz of baby spinach leaves.
07 - 2 and a half cups of marinara sauce.
08 - Shredded mozzarella, about 8 oz.
09 - 4 fresh basil sprigs.
10 - A quarter cup of Parmesan, grated.
11 - Optional: red chili flakes.
12 - Optional: a drizzle of honey.
13 - Garlic bread to serve on the side.

# Instructions:

01 - Arrange the oven rack closer to the top and heat the broiler.
02 - Peel and slice the garlic and onion.
03 - Warm olive oil in a 10-inch skillet that can go in the oven.
04 - Sauté the onion for 5-8 minutes until golden.
05 - Throw in the garlic and oregano. Stir for half a minute.
06 - Mix in the spinach little by little until it's all softened.
07 - Pour in the beans and marinara.
08 - Let it bubble for a few minutes, around 3 to 5.
09 - Sprinkle the mozzarella all over the top.
10 - Pop it under the broiler and wait until the cheese gets bubbly and starts browning. Should take 3-5 minutes.
11 - Sprinkle Parmesan and tear up some basil leaves. You can add red pepper flakes or honey now if that's your thing.
12 - Dish it up with some garlic bread on the side.

# Notes:

01 - Prepare ahead by assembling and storing in the fridge for a day max. Warm it at 350°F for 15 minutes, then broil.
02 - Keep leftovers in the fridge for no more than 4 days.
